Light those birthday candles: On Monday, March 4, the historical city of Chicago will be turning 176 years old! It’s time to celebrate the world-famous birthplace of Chicago-style hot dogs, deep-dish pizzas and none other than yours truly … Stock Yards! This week, we’re raising a toast to our hometown by sharing a quick history of how we got started in the Windy City. Happy birthday, Chicagoland!
In 1893, the Pollack family founded the Stock Yard Meat Packing Company, a retail butcher shop, on South Halsted Street—right in the original livestock market of Chicago. Almost 10 years later, in 1902, the family business shifted its focus from serving retail customers to supplying restaurants, hotels and clubs. As the Pollack family kept growing and their beloved company continued to spread out, they made a name for themselves throughout the nation. Then in 1955, when the demand for premium steaks at home reached an all-time high, the Pollacks met the market’s demand and the mail-order business concept—the Stock Yards we know and love today—was born. The first distribution facility was officially opened in 1968 in Las Vegas, and the supply chain has been steadily growing and thriving since then.

The retail business with delivery of Stock Yards steaks and chops directly to consumers’ homes has grown to include the same exceptional quality roasts, ribs, seafood, appetizers, desserts and more, while remaining focused on the key, core business that built success: steaks! Today, thousands of individuals and families, and even a few well-known celebrities, purchase Stock Yards steaks and beef for great family dinners, for enjoying with friends or serving to guests, for celebrating special occasions, and for holiday gifting. Even a large number of business customers select Stock Yards on an annual basis for their clients or employees as rewards and incentives. So from its start as a small family business to its transformation into a nationally acclaimed distributor of USDA Prime and USDA Choice steaks, Stock Yards continues to uphold its reputation as one of the country’s top suppliers of exceptional meats. But as long as we’re around, we’ll never forget where it all began: in the great city of Chicago!
