Chateaubriand, or Filet Mignon roast, is my go to meal for a dinner party. It is beautiful, elegant, and easy to prepare. It’s an absolutely perfect choice for someone like me who wants doesn’t want to be slaving away in the kitchen when family and friend are near.
Another plus is that the roast generally provides lots of left over Filet Mignon!
Our family favorite is Mary’s Simpler Horseradish and Green Onion Sauce. It is a wonderful side for your Chateaubriand and even better the next day on a roll with your left over meat!
This is a large recipe to serve a hungry family of 12 or more!
- 1 ½ cups of Mayonnaise
- 1 ½ cups of Sour Cream
- 1/3 cup of fresh Chives or Green Onion (I prefer the onion)
- ¼ cup of Horseradish (more if you like a kick!)
- ¼ cup of drained capers
- Freshly ground pepper to taste
Combine all the ingredients in a medium bowl. Season with pepper. Cover and refrigerate. This can be prepared one day in advance.
Bring to the table in a chilled serving bowl with a generous spoon. Or add a dollop in individual bowls for an elegant touch.
